Chickpea Recipe

I got this recipe from a magazine. It has been my favourite chickpea recipe ever since. It’s crunchy outside and chewy inside. Pair with brown rice, or toss with some fresh veggies….

  1. Rinse 1 cup of dried chickpeas and cover with water. Allow them to soak overnight, then drain. (If using canned, rinse, drain and pat dry.)
  2. Spread on a baking sheet and roast at 400F for 30 minutes, until tender.
  3. Remove from oven, toss with olive oil, sea salt and lemon or soy sauce, sesame oil and chili pepper. (I use sesame oil mixed with some rice vinegar)

Nutrients per 1/4 cup serving: 197 calories, 9g protein, 6g fat, 27.9g carbohydrates, 4.1g fiber. Excellent source of folic acid.
