Vegan Split Pea Soup

This soup is the BOMB!!! Hubby made it for me last Wednesday.  It is from the Green Cuisine cookbook – for $15, it is worth every penny.  Lots of recipes and all of them pretty simple.  I took the leftovers to work the next day and put it over some brown rice.

5 cups water

2 cups onions (diced)

1/2 cup carrots (sliced)

2 1/2 cups leeks (sliced)

1/2 cups potatoes (cubed) – optional for macrobiotics

1 piece kombu

1 small garlic clove (minced)

1 1/3 cups split peas

1 tsp salt

A pinch pepper

A pinch thyme

Procedures:  Bring water and veggies to a boil, add the split peas and simmer for 1 1/2 hours, stirring occasionally.  Add the seasonings. Serve.
